Quick, easy and budget friendly freezer crock pot meals.


With evening classes starting in a week and half, plus working and coaching, needless to say, I am strapped for time most days, and dont have time to cook! All together, shopping and prepping, plus throwing a meal into the crock pot took me 4.5 hours of my Wednesday evening, for a month worth of food prep! :) 
This was my grocery haul last night. Meat was picked up from Costco. I find you get the most amount of meat for your dollar.
***The Beef Stew cuts are not bite size, so please CUT THEM UP before you start throwing it into a zip lock bag****


Beef Stew (This was left over meat and veggies I had after prepping teh rest of teh meals. This would make 3 bags, I threw it all in one so we can take it for our long September long camping trip). 

Ingredients
  • 2 lb/ 454 G extra lean stewing beef, cut into 1- inch cubes 
  • 1 medium onions, chopped 
  • 2 Beef Bouillon Cube 
  • 1 lb. yams or sweet potatoes
  • 5 medium carrots, peeled and diced
  • 2 ribs celery, sliced
  • 1.5 tsp. dried bay leaves 
  • 1/2 tsp. dried rosemary 
  • 1/2 tsp. black pepper 
  • 2 Tbsp. whole wheat flour 
  • 3 cups water
  • 2 cups frozen corn 
  • 1 tsp. dried parsley 
  • 1/4 tsp. black pepper 
  • 3 garlic cloves, minced 
  • 1- 14.5 ounce can tomato sauce  
Directions 
Throw all ingredients, except for water in a large freezer zip log bag. On the outside of teh bag write teh date, teh name of teh meal, and "add 3 cups of water." Make sure to push extra air out of the bag to avoid freezer burn. The day before you want to cook eh meal, take it out of teh freezer and allow it to defrost in your fridge. The morning/ afternoon you want to eat the meal for dinner, juts put everything in your crock-pot, ad 3 cups of water, and cook for 3-4 hours on high or 6-8 hours on low. 





AUTUMN BEEF STEW (1 Freezer meal) 

Ingredients
  • 1 lb/ 454 G extra lean stewing beef, cut into 1- inch cubes

  • 2 cups apple cider 
  • 1 lb. yams or sweet potatoes
  • 3 medium carrots, peeled and diced
  • 2 ribs celery, sliced

  • 1/2 tsp. dried rosemary 
  • 1/2 tsp. black pepper 
  • 2 Tbsp. whole wheat flour 
  • 3 cups water 
Directions

Honey & Lime Chicken (1 Freezer meal) 

Ingredients 
  • 4 boneless, skinless chicken breast 
  • 2 garlic cloves (or 1.5 tsp. garlic powder) 
  • 1 small pineapple cut up (or 1 - 20 ounce can pineapple. Keep half teh juice) 
  • 1/4 cup honey (raw is best!) 
  • 2 Tbsp. low sodium soy sauce 
Directions
Throw all ingredients, except for water in a large freezer zip log bag. On the outside of the bag write the date, the name of the meal. Make sure to push extra air out of the bag to avoid freezer burn. The day before you want to cook the meal, take it out of the freezer and allow it to defrost in your fridge. The morning/ afternoon you want to eat the meal for dinner, juts put everything in your crock-pot, and cook for 3-4 hours on high or 6-8 hours on low. 
You can add brown rice to the crock pot for an extra carb. Serve with a fresh lime wedge to squeeze on top. You can dice the chicken before you put it in the bag. I personally don't like handling raw meat so I dice it after its done cooking. 





Chicken and Veggie Soup (2 Freezer bags) 

Ingredients 
  • 4 boneless, skinless chicken breast 
  • 1 - 14.5 ounce can of can diced tomatoes, no salt added (do not drain)
  • 1 lb. sweet potaoes or yams, diced into cubes 
  • 1 small onion
  • 2 clove minced garlic
  • 1 cup frozen corn 
  • 1 jalapeno, diced fine 
  • 2 limes, juiced 
  • 1/2 cup cilantro, chopped
  • 1 cube chicken Bolivian (I used veggie, because that's what I had on hand) 
  • 1 tsp. black pepper 
  • 1/2 tsp. sea salt 
  • 5 cups water 
Directions

 Throw all ingredients, except for water in a large freezer zip log bag. On the outside of the bag write the date, the name of the meal, and "add 5 cups of water." Make sure to push extra air out of the bag to avoid freezer burn. The day before you want to cook the meal, take it out of the freezer and allow it to defrost in your fridge. Mexican Chicken (1 Freezer bag) 

Ingredients
  • 4 boneless, skinless chicken breast 
  • 1 cup frozen corn 
  • 1 small jar salsa
  • 1 Tbsp. cumin 
  • 1 Tbsp. chili powder 
  • 2 cups brown rice 
  • 1 cup water 
  • **you can also add 1 cup of black beans. 21 Day Fixers this will UP your carb intake, so minus the rice or up your  yellow container***
Directions 
Throw all ingredients, except for water, in a large freezer zip log bag. On the outside of the bag write the date, the name of the meal, and "add 1 cups of water." Make sure to push extra air out of the bag to avoid freezer burn. The day before you want to cook the meal, take it out of the freezer and allow it to defrost in your fridge. The morning/ afternoon you want to eat the meal for dinner, juts put everything in your crock-pot, add 1 cup of water, and cook for 3-4 hours on high or 6-8 hours on low. Ingredients
  • 1.5 lbs. Beef stew meat 
  • 1 large red onion, chopped
  • 8 medium carrots, peeled and sliced 
  • 4 stalks celery, sliced 
  • 1.5 cups frozen corn 
  • 1 tsp. dried parsley 
  • 1/4 tsp. black pepper 
  •  3 cubs beef bouillon (one per a bag) 
  • 3 garlic cloves, minced 
  • 1- 14.5 ounce can tomato sauce  
  • 2 cups brown rice 
  • 5 cups of water
Throw all ingredients in a large freezer zip log bag. On the outside of the bag write the date, the name of the meal, and "add 5 cups of water." Make sure to push extra air out of the bag to avoid freezer burn. The day before you want to cook the meal, take it out of the freezer and allow it to defrost in your fridge. The morning/ afternoon you want to eat the meal for dinner, put everything in your crock-pot, add 5 cups of water, and cook for 3-4 hours on high or 6-8 hours on low. 




Sweet & Sour Chicken (2 Freezer Bags)

Ingredients 
  • 4 boneless, skinless chicken breasts
  • 1/3 cup reduced sugar ketchup 
  • 1/3 Dijon Mustard 
  • 1/4 apple cider vinegar 
  • 1 red bell pepper
  • 1 can low sodium tomato sauce 
  • 4 Stevia packets 
  • 1 small pineapple, diced up (or can of diced pineapple. Skip the juice, as it adds to your sugar content) 
Throw all ingredients in a large freezer zip log bag. On the outside of the bag write the date, the name of the meal. Make sure to push extra air out of the bag to avoid freezer burn. The day before you want to cook the meal, take it out of the freezer and allow it to defrost in your fridge. The morning/ afternoon you want to eat the meal for dinner, put everything in your crock-pot, add 5 cups of water, and cook for 3-4 hours on high or 6-8 hours on low.

This is the story of one of my incredible friends, who is by far the strongest lady I know, and I was lucky enough that she was willing to share her story with me, and all of you! Trust that in order to change your body, you have to start with your mind. 






"Donating Blood is my favorite thing to do. It gives me such a warm FUZZY feeling. And… they feed you afterwards. LOL

For over 15 years I was in a relationship that was very verbal abusive. I didn’t know how abusive it was until I ended it. This person attempted suicide, was not successful and became very anger afterwards.  I had the joy of finding him, and shortly afterwards I feared for my life while still running my own business producing stage shows across Canada and the US. 

My business was showcased on CBC’s Dragon Den, which I did manage to strike a deal with one of the dragon’s, but things in my relationship were not good.  My thyroid then stopped working. It’s funny how your body works! I think that it was really starting to fail because of the abuse.  The Specialist increases my medication from 110 mg daily to 320 mg daily because my body was shutting down. I had to be help to the bathroom, and could not hold my head up to eat. I watched the sky out my bedroom window while I laid in bed for over 8 months not knowing what was going to happen.  With Zero energy I contacted the police and had them escort me so that I could get my belongings. I moved into my neighbor's home for 1 year. God I love her so much!!!!  She feed me and kept really good care of me while I made arrangements to make the BIG move to Edmonton from Calgary. I dissolved my business with the help of a wonderful lawyer in Calgary which left me with Zero income. I just know it was the right thing to do as I wanted NOTHING to do with this person ever again.

Now in Edmonton I was unemployed and till struggling with energy. All I could do was a couple of hours of work each day.  I worked with my son. When the day was finished, I  would go home and crawl into bed for the rest of the day.  This went on for another two years. Lots of tears as it was a very hard struggle.  But, I was determined to over come this…and I did! I have no contact with this person and NEVER will.
Life is for living, and I have decided that I want to be always happy!  Family is everything to me.

My love for my sons, and their children & partners not to forget my girlfriends have given me so much strength."

My Results after the 2nd round of 3 Day Refresh

You cant really see a difference in my pictures, but the scale says otherwise. I mentally and physically feel MUCH better! My mental fog is lifted, I can sleep through the entire night, my nausea is gone, and I feel like I am in a better place mentally!

I will admit- I had fallen off the wagon recently. I felt nausea all the time. I had blood work done, and everything came back perfect, so at that point I knew it was my diet and my intestines were gunked up with crap, dragging me down, so I decided to do another round of teh 3 day refresh.

I wasn't perfect on this round, but as I said previously, I didn't do this for weight loss. I did it to get back on track with clean eating, get rid of some bloat, mental fog and my constant nausea.

I have had people say to me: 

"That's just silly to do these detoxes. Its all water weight, and you will gain it back as soon as its finished. "
  • This is my second round of the 3 Day Refresh and I have never automatically gained all the weight back. Day 3 I was able to go out, enjoy a nice meal, and a drink and not see re-repercussions of it the next morning. I use it to get back on track with clean eating, and when I know my body is full of junk. It helps clean out your system, which has always helped me feel better over all - mentally and physically. I also drink anywhere from 3-4 L of water every day, so yes, if you don't continue to do this, there is a chance your body will start to retain water. 
"You need to start working out and eating clean before you start start a detox, otherwise you overwhelm your body flushing out all these toxins."

    Is Shakeology Safe While Pregnant and/or breastfeeding?

    It's one of the most frequently asked questions I get. "Krista, is it safe to drink shakeology while pregnant?"


    So my question is... what isn't "safe" about it? Is it safer to eat a Big Mac and fries from the local drive through or fill up on soda and sugary drinks? Are you supposed to eat a donut in the morning instead of a daily dose of dense nutrition? Why wouldn't a nutritional tool like shakeology - with all of my superfoods, macronutrients, phytonutrients, probiotics, prebiotics (etc) be good for you and your growing baby? 


    Then, there's this crazy rumor - "They" say that you shouldn't drink Shakeology or mix it with prenatal vitamins because you and your baby may overdose on Vitamin A."

    You would have to drink more than 35,000 Shakeology shakes to reach toxic levels and it would take about 150 Shakeology shakes to harm you, your baby or your breastfed infant. Shakeology is not a harsh cleansing system where you drink a bunch throughout the day and practically starve yourself. We still eat healthy, whole nutrition dense foods! You drink ONE shake a day.. not 5, not 6, not 150. And that's all assuming that you could drink that many shakes before your body metabolized all the excess Vitamin A and excreted it. The Vitamin A content found in Shakeology is one of the highest quality vitamin A you could get - Beta Caratene (think... CARROTS :) )  Vitamin A toxicities only occur with preformed (retinoid) vitamin A (such as from liver). The carotenoid forms (such as beta-carotene as found in carrots), give no such symptoms.

This is why it's priced higher than all of those other shakes you can get on the market... you're actually putting HIGH QUALITY, good ingredients in to your body. Beachbody doesn't mess around. ;) There have been meal replacement/protein shakes for decades but Shakeology supports body in a completely different and sophisticated way. Beachbody didn't forumlate it with preservatives or artificial flavors just so they could make money or drop the price. They wanted something that would live up to what my body needs for a daily dose of dense nutrition. It supports the brain, heart, lungs - 11 systems that are interactive in a very complexed way - no "normal" protein shake is going to support all these systems.     Pumpkin Pie Shakeology
    - 8 oz almond milk

    My weight loss journey (its not a destination)


    I have been getting asked a lot lately about my weight loss and what’s my “secret”…

    Last year I made sure to work out 5 days a week. I stressed so much about clean eating, there were weekends that I wouldn't allow myself to drink to hopefully "see results." This led me to packing on weight! I stressed over everything, which lead to lack of sleep, which made me miserable... It was a vicious cycle.
    Chad and I separated in December. Come January I started going to therapy, where I learned coping skills, how to relax, and not stress the small stuff. I work out 5-6 days a week, (okay sometimes its 4 days a week). I follow the 80/20 rule when it comes to eating. I drink rum and cokes, a scatter beer or glass of wine on the weekends, and make sure my meals are clean to make up for the 80%. Sometimes you will see me in the McDonalds Drive though. (Opps! hehe).
    I laugh- A LOT! I am extremely happy. I wake up every morning with a grateful heart, focusing on the things that I can change, and everything that IS going right in my life (I no longer focus on what I think I need to change, or things “I need to stop”). I don't stress the small stuff. I’ve learned to “let go" of control (literally- I was a control freak and needed to know EVERYTHING, and have everything planned out to a T).  Letting go and trusting the Universe was the best thing I could have ever done for myself.

    If I miss a workout, or have go out for a beer and wings during the week I don't stress about it. I also don't let it turn into a week-long affair. I tell myself I had fun, and created memories, and I will never get that moment back. I don't stuff my face. I don't eat cookies or drink pop for the sake of it. If I am craving junk food I will usually get a timbit, eat it in 3-4 bites and I feel satisfied.
    I can no longer eat an entire chocolate bar (yup, the fat kid inside me could eat 2 no problem).  Since I've been on this year long journey of clean eating, I can honestly say that Shakeology helps curb most of my junk food cravings.

    I’ve been working on the The Hammer and Chisel program for the past month, which focuses a lot on heavier weights, more reps, which works for my body. Stick to your journey... and remember it took me a year to get where I am today. I've had my ups and downs- we all do! But the key is to NOT beat yourself up over a missed workout, or over a treat.
    Laugh more. Crank the music while you are cooking- dance and sing. Hell I do this when I am driving! Smile more and love the shit out of life!

    We are all perfectly imperfect, and the sooner you don't stress the small stuff, the sooner you will see exactly what I've been preaching!

    LOVE YOURSELF FIRST


    As a beachbody Coach I always stress to my challengers that they MUST carve out some "me time." We cannot continue to give if our cups are empty.

    The past month and half I have had a LOT of time to myself, to reflect, think about WHAT I want, WHY, and how I am going to get there. I have learned that it all boils down to taking care of YOU first. I am sure a lot of people can relate to this.. but when my relationship ended I realized a LOT of stuff about myself, and how to change those patterns. So I thought I would share with all of you today. 

    Everyone has an inner Ego, and it speaks with out thinking.  Its up to you how conscious or unconscious you are. I have learned that when I put more energy and focus into someone else before myself, my inner Ego takes over! It leaves me drained, and irritated- all the time. Eventually it made me feel like a terrible friend, spouse, etc. 

    So I want to teach you how to start "loving yourself" today. And know its NOT selfish to do something for yourself. Your happiness is just as important as anyone else's, so put yourself FIRST. ALWAYS.  At first it seems impossible, but as the weeks go by, I promise it gets easier. Mentally and physically you will feel a million times better. 


    1. Read Personal Development Books
    I used to be the person who HATED reading, until I found Personal Development, and now I can't get enough! I recommend taking 10 minutes a day to read, OR commit to reading one chapter a day. Some of my favorite books are:

    2. Spend time with family/ friends
    They know you best, and will  know how to cheer you up. Best of all- you can always count on them to tell you the truth when you are being a b**** (again this is your inner ego/ emotions taking over). 


    3. Workout 
    When you exercise, your body releases chemicals called endorphin's, which trigger a positive feeling in the body, giving you more energy. 

    Regular Exercise has been proven to: 
    • Reduce Stress 
    • Ward off anxiety and feelings of depression 
    • Boost self -esteem 
    • Improve sleep 
    • Strengthens your heart 
    • Increases energy levels 
    • Lower blood pressure 
    • Makes you look fit and healthy 


    4. Eat Clean
    Work out and eat clean consistently for a week.  After a week of doing this,  I challenge you to eat one crappy meal and note how you feel- mentally and physically.     5. Go to therapy
    I will be the first to admit that I used to think this was a bad thing, and I didn't need to go because I've never been diagnosed with depression, OCD, etc. I've went to a few different therapist, sat on the couch, talked about my feeling, but never felt like I got anything out of it until I started going to Cognitive Behavioral Therapy. Here you don't sit on the couch and talk about your problems kind of therapy. This targets your moods, thoughts, where your irritability (like I mentioned in the beginning when the Inner Ego takes over). You work towards goals and a happier life! I've only been to one session so far, but have been loving it! 

    6. Meditate and Essential Oils 


    Meditation helps quiet the mind, helps you realize the frustration, anger or irritably you may be feeling right now is you Inner Ego, or "emotions" taking over.  Meditation  helps your mind to stop racing, as well as to stop and think before you speak. 

    I personally love the essential oils. I try to use home remedies whenever I feel sick, drained. It helps me feel more relaxed. I will sometimes use it when I am working out- I find it helps with my breathing- especially when I'm trying to relax during yoga.     7. Stop Feeling Sorry for Yourself 
    Every time you get upset at something, ask yourself if you were to die tomorrow, was it worth wasting your time being angry? Remember- you cannot live a positive life with a negative mind. 

    Make a list of things that you are grateful for. A few days a week I journal about everything that I am grateful for. It reminds me of everything amazing that I have going on in my life, and things aren't that bad. For example: I am able to work full time, have a full time education, have incredibly supportive family and friends, I have more than 1 best friend, I have a roof over my head, food on the table, a bed to sleep in, the most lovable dog in the world,  amazing challengers who I love to the moon and back who have become very close friends... 

    Now I challenge you to create a list of things you are grateful for!

    8. Find a Hobby 
    I attend University 3 nights a week, and work full time. But coaching is my passion! I LOVE interacting with people every day, the feed back, and just knowing that I am making a difference in the world.  Some other hobbies may include: running, cooking, public speaking.

    9. Set Goals 
    Make sure they are realistic, and obtainable. One of my biggest hurdles to get over was living in the past, and focusing way too much on the future (things that I CANNOT control). Set goals for the things that you KNOW you can control. Write down big goals, and little goals underneath of how you are going to reach each goal. 

    10. Journal your thoughts and Feelings 
    Do you ever feel like you don't like yourself? You know how that saying goes, "before you diagnose yourself with depression, make sure you aren't surrounded by a bunch of assholes." This is so true. Not everyone is going to like you, its human nature. Because of the way you look, the way you sound/ talk, you have the same name as someone they don't like... You WON'T click with everyone. So stop trying to please everyone else and pretend to be someone that you aren't.

    The biggest eye opener for me was to journal every time something irritated me. In a week I figured out that: I can be quite vulgar when I am uncomfortable, trying to fit in, etc. and I don't like that about myself, so I'm working on building my confidence around others. Another trigger is when people ask the same question in several different ways, and again, No! I still don't know the answer--> I'm guilty of this!

    So realizing what irritates you, why it irritates  (its usually a reflection of what you don't like about yourself), then change it.
